Banana Bread for Dessert? #Recipe

Banana Bread isn’t just for breakfast. In our home, it is a mid-meal snack and after dinner dessert! I think it has something to do with the streusel topping. It takes a boring quick bread and turns it into something spectacular and sweet.

This banana bread recipe below contains NO granulated sugar, NO eggs, NO milk, and NO butter or oil. The streusel topping contains a little more than one tablespoon of shortening, or butter, on each loaf.  Quick, easy, and dairy free – can this really be for dessert?

*The recipe below prepares enough batter for three small loaf pans.

Ingredients:

  • 5-6 Ripe Bananas
  • 2/3 cup Apple Sauce
  • 1 tsp Vanilla Extract
  • 1 1/2 cup Brown Sugar, firmly packed
  • 3 cups Self Rising Flour

Topping Ingredients:

  • 1 cup Brown Sugar
  • 1/2 cup All Purpose Flour
  • 1 tsp Cinnamon
  • 4 tbsp Shortening or Butter

Banana Bread Baking Instructions:

Preheat oven to 325 degrees.

Mash bananas in a small bowl.  Add apple sauce, vanilla, and brown sugar to the bananas and combine.   Pour flour into a large bowl and create a well.  Pour banana mixture into the well and combine gently.

In a small bowl, prepare streusel topping by combining 1 cup of brown sugar, 1/2 cup of all purpose flour, and 1 tsp of cinnamon (if desired). Cut in 4 tbsp of butter or shortening until the mixture resembles crumbs.

Grease loaf pans and divide batter evenly among the pans.  Top each loaf with streusel.  Bake for 40-55 minutes (until toothpick inserted comes out clean)

Note:  Substitute All Purpose Flour in this recipe by adding add 1-1/2 Tbsp baking powder and 1-1/2 tsp salt to your flour before adding banana mixture.
