A Healthy New Year Starts with Breakfast!

You’ve probably heard that breakfast is the most important meal of the day, but do you know why? Just like cars need gas, our bodies need fuel for energy, clarity and overall good attitudes. Eating breakfast also increases metabolism, and studies have shown weight loss is easier for those who eat breakfast. When you keep your body from getting the fuel it needs, there’s a tendency to overeat during lunch and dinner. Similarly, eating the right breakfast foods can help boost your day.

Here’s Salba Smart’s guide to a healthy breakfast:

·         Eggs – You’ve probably seen all the commercials for the “Incredible Edible Egg,” and here’s why: eggs are a great source of protein, which gives you energy for the day, and contains nutrients like Vitamin D.

·         Oatmeal – It’s such a classic breakfast food, but it’s often overlooked. Oats are rich in Omega-3 fatty acids, folate and potassium. Whether you cook on a stove, grab a pouch to-go, or heat in the microwave, oatmeal is a quick and filling breakfast that gets the job done. Plus, it’s one of the best foods to add Salba Chia seeds for a boost of fiber, protein and iron.

·         Greek Yogurt – Another great grab-n-go option, greek yogurt is packed with calcium and protein, and mixing in fruit can add sweetness and flavor.

·         Grapefruit – Add a little sweetness to breakfast by eating grapefruit. The tart, tangy and sweet fruit is filled with Vitamin C, which can help reduce cold symptoms, as well as Vitamin A and fiber.

Here’s a great recipe for Gluten Free Salba Banana Coconut Muffins:

Ingredients

  • 2 tablespoons coconut oil
  • 3 each room-temp eggs
  • 1/3 cup mashed banana (1 small, ripe banana)
  • 1 teaspoon vanilla flavor or vanilla extract (alcohol-free)
  • 1/4 teaspoon salt
  • 2 tablespoons Salba Whole Seeds
  • 1/4 teaspoon baking powder
  • 1 tablespoons shredded coconut
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons raisins, cranberries or blueberries
  • 1/4 cup coconut flour

Instructions

Cooking instructions: Preheat oven to 400°F. Mix together oil, eggs, banana, vanilla and salt. Add coconut flour, Salba, baking powder, cinnamon, and shredded coconut, and whisk together until smooth. Fold in raisins. Other options include dried cranberries, blueberries, walnuts, cashews or cacao nibs. Pour into muffin cups greased with coconut oil. Bake 15 minutes or until toothpick inserted in center of muffins comes out clean. Cool on wire rack.| This recipe is Gluten and Sugar Free. Combining the mild flavors of banana and coconut, these muffins are truly a unique healthy snack that your kids will love. Add raisins, cranberries, or blueberries to add a new dimension of texture.
