Twice-Baked Potato Bites
4 Slices Uncooked Bacon
10 Red potatoes (2.5 inches diameter) unpeeled
2 tbsp Three onion Rub, divided
4 oz Mozzarella cheese
2 oz fresh Parmesan cheese
3 tbsp mayo
3 tbsp source cream
2 green onions
- Cut bacon into ¼ inch pieces and cook until crisp, then drain
- Cut potatoes in half. Scoop out ½ inch deep well from center of each potato
- Arrange potato halves in microwave baking pan, spray with canola oil. Sprinkle with ½ tbsp of rub
- Cover potatoes with Parchment paper and microwave on High 9 minutes, or until tender.
- Grate mozzarella and parmesan cheese.
- Combine cheeses, remaining onion rub, mayo and sour cream in small bowl
- Using Small scoop, scoop cheese mixture evenly into potato halves. Microwave uncovered on high 1 to 2 minutes until cheese mixture is melted.
- Sprinkle potatoes with bacon and green onions and ENJOY!
