A simple scones recipe that can brighten up the breakfast table at once:
Lemon blueberry scones
This scone recipe is sure to draw accolades from all family members as it has a tangy as well as sweet taste and flavor. It is also moist and absolutely yummy. The only thing that is required for the same are fresh blueberries. If they are not available, frozen varieties can be used as well. Just make sure that they are completely defrosted and dried. It hardly takes 30 minutes to get the whole recipe ready.
Things required:
- Blueberries – 1 ½ cup
- Unsifted all purpose flour – 2 cups
- Granulated sugar – 2 tablespoon
- Baking powder – 3 tablespoon
- Eggs – 3
- Heavy Cream – ½ cup
- Zest of medium lemon – about 1 tablespoon
- Butter – 4 tablespoon
- Table salt – ½ tablespoon
Procedure:
- The oven needs to be preheated to 400°F.
- Mix flour, salt, sugar and baking powder in a large bowl. But butter in the mixture and see that it looks like crumbs.
- Take a different bowl and beat the two eggs in it. Add the cream and stir it well. Now this mixture is poured into the dry mixture and stirred really well.
- Lemon zest and blueberries are added to the mixture and mixed thoroughly.
- Take a board and flour it and pour out the whole mixture on the board. Knead the mixture so that it turns into a lump. In case it refuses to form a lump, add some water or milk or cream and try making dough.
- Once the dough is prepared, cut it into 1 inch thickness and make shapes with a pastry cutter.
- Take the baking sheet and brush some butter on it. Parchment paper can also be used.
- The scones are put on the baking sheet.
- Now the third egg is taken and the yolk and egg white is separated. The egg white is beaten. The top of the scones are brushed with the egg white. Then some sugar is sprinkled on the same.
- The baking should be done for minimum 15 minutes. Check till they become golden brown in color.
