Easy Drop Cookie Recipes!

In the world of cookies, there are few things quite as simple as drop cookies. Easy to make and nothing short of delicious, these tasty treats come in a number of different varieties. Technically speaking, drop cookies are any cookies you make by dropping a spoonful of dough directly onto the baking pan, which means there are lots of different recipes that fit the category. Whether you’re looking for something simple to take to a holiday cookie exchange, give as a Valentine cookie gift, or you want something tasty to serve at a baby shower, drop cookies are always the way to go. Here are a few recipes to get you started.

Oatmeal-Chocolate Chip Drop Cookies

This recipe requires 1 ½ cups of brown sugar, a cup of butter, a teaspoon of vanilla, an egg, 2 cups of quick cooking oatmeal, 1 ½ cups of all purpose flour, a teaspoon of baking soda, ¼ teaspoon of salt, a cup of semisweet chocolate chips, and a cup of chopped walnuts. Start by heating your oven to 350 degrees. Cream the brown sugar and the butter. Stir in the vanilla and the egg. Add the oats, flour, baking soda and salt. Add the chocolate chips. Make sure you’ve mixed it well, then drop onto cookie sheets. You’ll want about a rounded teaspoon in each drop. Space them two inches apart. Bake for nine minutes, then cool slightly on the cookie sheet. Then remove to a wire rack for further cooling.

Coconut Cream Macaroons

This recipe needs three packages of flaked coconut, a cup of all-purpose, ½ teaspoon of salt, a can of sweetened condensed milk, 2/3 cup canned cream of coconut, a tablespoon of vanilla, ¼ teaspoon of almond extract, an egg, a cup of semisweet chocolate chips, and a tablespoon of vegetable oil. Heat the oven to 350 degrees. Line a cookie sheet with parchment paper. Sprinkle a cup of the coconut over the paper, then bake for five minutes. Mix the toasted coconut, the remaining untoasted coconut, the flour, and the salt. In a separate bowl, beat the liquid ingredients and the egg. Add wet to dry and stir until well mixed. Drop the mixture by heaping teaspoonfuls about two inches apart onto cookie sheets. Bake for 12 minutes. Move cookies to wire racks to cool immediately.

Pumpkin Drop Cookies

You’ll need ½ cup of softened butter, ¾ cup of white sugar, ¾ cup of brown sugar, 2 eggs, 1 can of pumpkin, 2 ½ cups of all purpose flour, 2 ½ teaspoons of baking powder, 1 teaspoon of baking soda, 1 teaspoon of salt, 1 teaspoon of cinnamon, ¼ teaspoon of allspice, ¼ teaspoon of nutmeg, and a cup of raisins. Heat the oven to 375 degrees. Grease the cookie sheets with shortening. Cream butter and sugars. Beat in the eggs. Stir in the pumpkin. Add all of the additional ingredients and mix well. Drop by rounded teaspoonful onto cookie sheet. Place each about two inches apart. Bake for ten minutes. Cool for two minutes on cookie sheet, then remove to a wire rack to finish cooling.
