Right now Irish (or Irish-like) ingredients are on sale in the grocery stores in preparation for St. Patrick’s Day next week. I think this is the perfect excuse to go ahead and try out a few new dishes to add to your usual lineup.
What more incentive do you need than a sale?
If you love potatoes you will love everything Irish food has to offer. Potatoes are a just as much of a staple to the Irish as the pepper is in Hispanic cuisine. They are used in soups, pancakes, fried as chips, and made into creamy deliciousness when mashed with milk and cream.
Monday: Crock Pot Dublin Coddle
This meal with sausage, carrots, potatoes, and bacon is a flavorful start to your week. It takes minutes to prep for your crock pot and can be simmered on low all day while you are at work or tending to other tasks.
Tuesday: Guinness Beef Stew and Irish Soda Bread
I know what you’re thinking. “You want me to make a stew in the middle of the week?!” Yes! Tuesday is often the day of the week that is less busy for many families, so Tuesday gets the beef stew! Don’t worry though, you’ll have another great stew to make this weekend!
Wednesday: Irish Colcannon
Parsnips and potatoes with cheese! What a great meal for a mid-week pick-me-up! What I love about this meal most is that you can serve the leftovers as a side dish with tomorrow’s dinner!

Corned Beef in 90 minutes? Is that even possible? Those who have a pressure cooker are saying “YES!” because they know how much faster everything cooks in their pressure cooker. If you don’t have one, get one by Thursday — you won’t regret it!
