I Made a Weeknight Special with Berolli Meal Soup!
Who doesn’t love a challenge?
Bertolli sent me a coupon to get their new hearty, easy to prepare, restaurant quality Bertolli Meal soup! These tasty soups are in the Frozen food section at your local grocery store. I had an hour to make the meal extra special for my hubby and son. The challenge was to do this on a weeknight, after a busy day at work and school. I will share pictures of our special night as well as my top three tips. But first, let’s learn about Bertolli Meal Soups.

My Tuscan Style Weeknight meal:
I chose Tomato Florentine and Tortellini with Chicken. This delicious soup is made with “Cheese-filled tortellini, white meat chicken, spinach and tomatoes in a rich tomato bisque with a hint of basil.” (Please don’t tell my son it had spinach in it.) It was so easy to make. First you open the bag. Pour it into a saucepan. Add 1 cup of water. Let it come to a boil. Then cover it and let it simmer for 5 minutes or so until the pasta is tender. We like our pasta a little more tender then some, so I let it simmer for 10 minutes.
My husband loved it! He called it hearty, robust and filling. He is looking forward to trying another Bertolli Meal Soup! I loved it. It was so creamy and delicious. The tortellini weren’t all squishy and soggy. My son like it, but not as much as we did. Kids are picky.
So how did I make our meal special? One thing I did was to let my son eat his soup in the living room. Poor guy has a head cold and didn’t want to come to the table. I wrapped him up, gave him a mug of the Tomato Florentine soup and some bread. He loved being waited on and eating in front of the TV. I also tied a balloon to his bowl after he ate. Kids love balloons, it makes any event fun.
My husband and I ate our special meal in the dining room. I used handmade cloth napkins, placemats and special water glasses. It was a special weeknight meal for us because we normally eat in the kitchen. Some nights we don’t even eat together.
My husband knew we were going to have a special Weeknight meal. He actually helped set the dining room table. He said we had a Tuscan theme for dinner! That made my Weeknight meal special!
My top 3 tips for a Special Weeknight meal:
1. Make it fun. Use balloons, eat in the living room, do something out of the ordinary.
2. Have a theme: The colors of the cloth napkins, plates and soup all led to a Tuscan feel.
3. Eat together: Even when everyone’s schedules don’t match, try to at least eat together a few times a week.
