Low Carb Cauliflower Pizza

  • One bag of frozen cauliflower
  • One bag of mozzarella cheese
  • One bag of Tex-Mex blend cheese
  • 3 large eggs
  • ¾ Teaspoon of Garlic Salt
  • 3 Teaspoons of Oregano
  • 3 Teaspoons of Paprika
  1. Start off by ricing your cauliflower. I used my Nutribullet and it riced it nicely while frozen.
  2. Next, cook your cauliflower in the microwave for 8-10 minutes.
  3. You'll want to let it cool before mixing with other ingredients. I put mine in the fridge for 10 minutes or so - just enough so it's not steaming.
  4. Now you stir in the rest of the ingredients, minus the Tex-Mex blend and the pizza toppings.
  5. After it's stirred really well, put in your pizza pan and press with a wooden spoon.
  6. Cook the crust for approximately 20 minutes or until nice and brown.
  7. Put remaining cheese and toppings of choice on crust and cook for 5-7 minutes or until cheese is melted.
