Chocolate Peppermint Cupcake Delights

  • 1 box Devil's Food Cake Mix
  • 1 cup shortening (I use Crisco)
  • 2 sticks (1 cup) butter, room temperature
  • 4 cups powered sugar
  • 1 tsp. Vanilla extract
  • ¾ tsp. Peppermint extract
  • 2 Tblsp. water
  • Candy Canes or peppermint candies
  • Minature Chocolate Chips
  1. Preheat oven to 350 degrees.
  2. Mix boxed cake mix according to instructions. Pour into greased muffin tins and bake.
  3. Remove from oven and allow to sit 1-2 mins, then immediately remove to cooling rack (helps prevent sticking).
  4. Allow to cool completely.
  5. Pipe frosting onto the cupcakes using a Wilton 1M or Ateco 842 tip into an upward spiral and add into a decorative cupcake wrapper.
  6. Then the fun begins!
  7. With Mini Chocolate Chips and Peppermint crunchies and finish by adding a candy cane stick in the cupcake.
  8. You can leave off the Mini Chocolate chips and add Peppermint crunchies and a little red sugar sprinkles.
  9. The again, you can even leave off the Mini Chocolate Chips and the Sugar flakes and go with only the Peppermint crunchies! Or, do like I did and make several combinations for even more fun!
  10. Whether you add the extra toppings or not, the frosting has a hint of Peppermint so you still get the flavors!
  11. That's it! Now its time to enjoy your Chocolate Peppermint Cupcake delight!
