6 large fresh peaches (or 7-8 small medium); peel, pit and slice into thin to medium wedges
¼ cup brown sugar
¼ cup white sugar
¼ tsp. ground cinnamon
⅛ tsp. ground nutmeg
1 tsp. fresh lemon juice (bottled lemon juice is acceptable if you don't have a fresh lemon)
2 tsp. cornstarch
1 cup all-purpose flour
¼ cup brown sugar
¼ cup white sugar
1 tsp. baking powder
½ teaspoon salt
6 Tbls. unsalted butter, cut into small pieces (keep chilled until ready to use)
¼ cup boiling water
Final Topping:
3 Tbls. white sugar
1 tsp. ground cinnamon
Instructions
Preheat oven to 400 degrees.
Peel, pit and slice peaches into thin to medium wedges.
Using a large mixing bowl - combine the peaches, ¼ cup brown sugar, ¼ cup white sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir and toss to evenly coat all the peaches.
Pour into a 2 quart baking dish.
Bake the coated peaches in preheated oven for 10 minutes.
Using another large bowl, combine flour, ¼ cup brown sugar, ¼ cup white sugar, baking powder, and salt.
Slice butter into small sections.
Use a pastry blender to cut into the sugar/flour mixture until it resembles coarse meal. If you don't have a pastry blender, just use your fingertips to blend in.
Stir in water until the mixture is barely combined.
Remove the peaches from the oven and drop spoonfuls of flour-sugar mixture over them.
Sprinkle the final topping mixture of sugar and cinnamon over the entire cobbler.
Bake 25-30 minutes or until topping is golden brown. Watch carefully in the final few minutes.
