Peach Cobbler Dessert

  • 6 large fresh peaches (or 7-8 small medium); peel, pit and slice into thin to medium wedges
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • ¼ tsp. ground cinnamon
  • ⅛ tsp. ground nutmeg
  • 1 tsp. fresh lemon juice (bottled lemon juice is acceptable if you don't have a fresh lemon)
  • 2 tsp. cornstarch
  • 1 cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • 1 tsp. baking powder
  • ½ teaspoon salt
  • 6 Tbls. unsalted butter, cut into small pieces (keep chilled until ready to use)
  • ¼ cup boiling water

  • Final Topping:
  • 3 Tbls. white sugar
  • 1 tsp. ground cinnamon
Instructions
  1. Preheat oven to 400 degrees.
  2. Peel, pit and slice peaches into thin to medium wedges.
  3. Using a large mixing bowl - combine the peaches, ¼ cup brown sugar, ¼ cup white sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir and toss to evenly coat all the peaches.
  4. Pour into a 2 quart baking dish.
  5. Bake the coated peaches in preheated oven for 10 minutes.
  6. Using another large bowl, combine flour, ¼ cup brown sugar, ¼ cup white sugar, baking powder, and salt.
  7. Slice butter into small sections.
  8. Use a pastry blender to cut into the sugar/flour mixture until it resembles coarse meal. If you don't have a pastry blender, just use your fingertips to blend in.
  9. Stir in water until the mixture is barely combined.
  10. Remove the peaches from the oven and drop spoonfuls of flour-sugar mixture over them.
  11. Sprinkle the final topping mixture of sugar and cinnamon over the entire cobbler.
  12. Bake 25-30 minutes or until topping is golden brown. Watch carefully in the final few minutes.
