Crispy Caesar Chicken Breast

  • ½ bottle Wish-Bone® E.V.O.O Caesar Vinaigrette Dressing
  • 1-2 lb. boneless skinless chicken breast halves, cut in half and pounded thin (see notes below)
  • 1 cup whole wheat seasoned bread crumbs (I didn't have whole wheat, so I used garlic and herb flavored)
  1. Preheat oven to 400°F.
  2. Pound the chicken breast until thin and flat.
  3. Place breadcrumbs in pie plate.
  4. Pour ½ bottle of Dressing into shallow bowl.
  5. Dip chicken breasts into Wish-Bone® E.V.O.O. dressing then place in breadcrumbs, pressing down to coat.
  6. Arrange on baking sheet and bake 20 minutes, or until chicken is golden brown and cooked.
•To save money, I used regular bone-in chicken breast with skin (it usually cost less even when not on sale). Have you saw the price on boneless, skinless breast lately? Ouch! I simply deboned, skinned and halved the breast myself :)

•For this recipe, and to get 6 breast patties, I used 3 large chicken breast. I wanted to make sure I had seconds for the hubs.
