Scotcheroos Rice Krispie Treats Recipe

Ingredients
  • 6 cups rice cereal
  • 1 cup white sugar
  • 1 cup corn syrup
  • 1 cup creamy peanut butter
  • ¾ cup butterscotch chips
  • ¾ cup chocolate chips
  • ¼ cup toffee bits
Instructions
  1. Grease and line a 8" x 8" casserole pan and set aside.
  2. Pour the rice cereal into a bowl and set aside.
  3. Combine the white sugar and corn syrup in a saucepan and heat over medium heat.
  4. When the sugar is completely melted and incorporated into the corn syrup, stir in the peanut butter. Heat for 2 minutes then remove from heat.
  5. Combine the corn syrup mixture with the rice cereal and stir to coat evenly.
  6. Fold the rice cereal mixture into the casserole dish and set aside.
  7. Combine the butterscotch and chocolate chips and melt - either using a double boiler or heating in the microwave for 30 second bursts, stirring in between reheatings.
  8. Pour the melted chocolate mixture over the rice cereal and smooth with an offset spatula.
  9. Sprinkle the toffee bits over the melted chocolate and allow to set for 2 hours, or overnight.
