Yield: about 12 cookies
Ingredients
- 1/2 Cup salted butter, softened
- 2/3 Cup granulated sugar
- 1 teaspoon almond extract
- 1 large egg
- 1 2/3 cups all purpose flour
- 2 cans Vanilla frosting
- Red, green and blue food coloring
- 3 Decorating bags
Directions
Preheat your oven to 350 degrees and line a baking sheet with a piece of parchment paper.
Use a hand or stand mixer to beat your butter and sugar together until creamy.
Mix in your almond extract and egg.
Now mix in your flour.
Knead the dough in your hands, add a couple tablespoons of flour if the dough is too sticky.
Lay down another piece of parchment paper, flour a rolling pin and roll your dough out to about 1/8” thick.
Use a scalloped circle cookie cutter to cut out about 12 circles and place onto the lined baking pan.
Bake your cookies for 8 to 10 minutes and let cool.
Mix 1 container of frosting with yellow food coloring and frost each cookie.
Divide the next container or frosting into 3 bowls and color each one a different color: red, blue and green.
Fill 3 decorating bags or sandwich bags with the frosting, cut a small tip off the end and add dots to the yellow cookies.
