Place paper cupcake wrappers in muffin tins. Spoon in cake batter using an ice cream scoop or other utensil to measure evenly. Fill approximately half-way full or a little more.
Remove from oven and allow to cool completely on baking rack.
Spoon frosting into a large mixing bowl. Add a small amount of green food coloring and mix well with electric mixer or stand mixer. Add additional food coloring, to achieve the tint you want.
Using a closed star frosting tip and bag, pipe small stars to cover the cupcake top.
Working in small batches, use a small baggie to melt a handful of the melting chocolate. Push to one corner and snip the very tip off or use a toothpick to pierce a hole in the corner. Repeat melting as needed.
The bird's nest is made in layers. Begin by piping a circle in the center of the cupcake. Circle the cupcake a couple of times and move on to the next cupcake. Place on plate in freezer for a few minutes.
Remove and add another layer on the bird's next. Repeat procedure until the nest have a little height.
Place 3 small candy eggs in center of bird's nest, securing with a bit of the chocolate. Place in fridge for a few minutes.
Remove and pipe more chocolate around the eggs, building the nest up around them.
Enjoy!
