What goes with Pumpkins? APPLES! I decided to make an Apple Crisp and use the Little Bites® Pumpkin Muffins for the topping. Check out my recipe below:
Ingredients:
- 10 – 12 Apples, peeled, cored and sliced. I used Macintosh
- 2/3 cup of sugar
- 1/4 cup of butter or margarine
- 2-3 tablespoons of Cinnamon sugar
- 2 tsp of lemon juice
- 2 teaspoons of Corn Starch
Topping
- Granola- 1 1/2 cups
- 1/3 cup of butter
- Brown sugar if needed
- 6 Entenmann’s® Little Bites® Pumpkin Muffins squished up
- 2 pouches of Entenmann’s® Little Bites® Pumpkin Muffins for the top
Preheat the oven to 350 degrees. Spray a casserole dish with Pam Spray. Mix the apples and other ingredients in a mixing bowl. Pour into the baking dish. Mix the topping in a mixing bowl. I microwaved the butter a little bit so it would mix with the granola better. I squished up 6 muffins and added them to the mix. Then pour the topping on the apple mixture. Then cut Little Bites® Pumpkin Muffins in half and arrange them on the top of the dish.
This is how it looked before I baked it.
I baked it at 350 degrees for about 35 minutes. I did cover it with foil so the muffins didn’t burn.
Serve it warm- with or without ice cream and enjoy!
