Sometimes in the afternoons I get a craving for something sweet. At our house, we are not big sweet-eaters and rarely make whole cakes or keep sweets in the house. However, all isn’t lost! With a few simple ingredients that most of us have in our pantry and a few strawberries, you can whip up a delicious Strawberry Mug Cake. By making it in a mug, you have a single serving of yummy goodness!
I love this simple Strawberry Mug Cake recipe because it isn’t overly sweet. It uses a little sugar and the rest of the sweetness comes from the naturally sweet strawberries. Pair it with a few extra strawberries, a dallop of whipped cream, and a scoop of ice cream for a dreamy afternoon delight! Strawberry Mug Cake

Ingredients
1 1/2 tbs. butter
3 tbs. milk
2 tbs. sugar
1/2 tsp. vanilla flavoring
1/4 cup all-Purpose flour
1/4 tsp. baking powder
1 small diced strawberry, plus additional strawberries for serving
Reddi-wip Original Dairy Whipped Topping, if desired.
Directions
Place butter in a large microwave-safe mug and soften in microwave.
Add all the remaining ingredients, including a few (not to many, as it will make the batter to heavy) of the diced strawberry bits. Mix until just combined. Add the remaining diced strawberries on the top.
Microwave on high for approximately 2 minutes. If after 2 minutes it is still moist, microwave an additional 15 seconds. 2 minutes is perfect in my microwave, but microwaves can vary. Do not overcook!
Remove from the microwave.
You can eat it straight from the mug or loosen around the edge with a butter knife and invert onto a plate.
Serve while warm with ice cream, additional strawberries, and topped with Whipped Topping if desired.

Can use Self-Rising flour in place of the All-Purpose except omit the baking powder.
