What’s for supper? It is a question most of hear every day, right? Well, we eat a lot of chicken, but there are only so many ways to serve chicken. But, wait! Maybe not! Instead of the same old ways, why not a delicious “stuffed” recipe? Have you ever tried Cream Cheese Stuffed Chicken? You read that right! The chicken itself is stuffed! Although, there is a bit of an argument at my house because I like chicken breast and the hubs likes thighs. Admittedly, the thighs are a little harder to work with, but so worth it! Don’t worry, this yummy recipe works for both!
We are grilling fanatics and grill year-round. Don’t worry! I’m not asking you to fire up the grill unless you love grilling too! This easy recipe can be done on the grill or in the oven. Serve it with your favorite side dishes (we served with a cabbage, mushroom, onion stir-fry). You will have a meal the family will love and be asking for seconds! Check out how easy the recipe is! Cream Cheese Stuffed Chicken Recipe
Prep Time: 20 mins
Marinade Time: 1 hour
Cook Time: 20 mins
Ingredients:
4 chicken thighs (deboned) or breast, skin on or off
8 slices thick cut bacon
Marinade Mix:
1 cup soy sauce
3 tsp Worcestershire sauce
6 tsp. Hickory Liquid Smoke
1 Tbsp. Season-All
1 tsp onion powder
3/4 tsp garlic powder
1/2 tsp Chicago Steak Seasoning
1/2 tsp Spicy Montreal Steak Seasoning, optional for spiciness
Stuffing Mixture:
4 oz. Cream Cheese
1/2 tsp Season-All
1/4 tsp garlic powder
1/4 tsp onion powder
2 Tbsp. bacon bits
Instructions:
If grilling, prepare grill. If using the oven, preheat to 350 degrees.
In a large mixing bowl, combine all ingredients for the marinade mix.
Stir until well combined.
Place chicken pieces into the mixture. Stir to make sure it is well combined.
Allow to marinate in mixture for one hour.
Meanwhile, in a small mixing bowl, combine all ingredients for stuffing mixture and mix until smooth and creamy.
Remove chicken from marinade and allow the excess marinade to drain off.
Spread the chicken open to lay flat and spoon 2-3 tablespoons of stuffing mixture onto each piece. Do not overfill – it will run out if you do!
Carefully roll chicken from one end to the other and secure with toothpicks. Wrap 2 slices of bacon around each piece of chicken, pressing down onto toothpicks.
Sprinkle with your favorite rub.
Place chicken on grill to cook, or if using the oven method, place in a 350 degree oven and bake 20 minutes or until internal temperature reaches 165 degrees. Remove from oven and place in broiler for 2-3 minutes to brown and crisp bacon.
Serve this yummy Cream Cheese Stuffed Chicken with your favorite side dish and maybe a salad.
