The perfect confectionery combination, to me, is peanut butter and chocolate. I love peanut butter and when you add chocolate of any variety it just makes it so much better. Since it is a weakness for me I have to keep things like Reese’s cups or these Peanut Butter Squares far away, or I will eat them all. Therefore if you are like me, bring these to an event or share them so you do not finish off the whole 9′ by 13′ pan of them.
These Peanut Butter Squares are delicious and very easy to make. Since they do not need to be baked they are fairly quick to whip up. The longest wait was while the chocolate was hardening in the fridge.
What you will need
For the crust:
- 1/3 cup unsweetened cocoa powder
- One sleeve of graham crackers (2 cups)
- 1/3 cup sugar
- 1/3 cup melted butter
For the Filling:
- one sleeve graham cracker (2 cups)
- 2 cups powdered sugar
- 1 cup melted butter
- 1 cup peanut butter
For the topping:
- 1 1/2 cups semi sweet chocolate chips
- 4 Tablespoons of peanut butter
To make the crust you crumble up the graham crackers, then mix them with the sugar, melted butter, and cocoa powder. This will create a chocolate graham cracker crust. Next dump that into a 9′ by 13′ baking dish, and press it firmly along the bottom of the dish. Set the dish aside for a few minutes.
For the filling your grind up the graham crackers finely. Once they are real fine, add in the powdered sugar, melted butter, and peanut butter. Then mix them well together in a stand mixer. Lastly spread the peanut butter mixture over your graham cracker crust in the baking dish.
To make the topping you need a double broiler to melt your chocolate chips in. Stir constantly at a low heat so you melt it, without burning it. Then add the 4 Tablespoons of peanut butter into the melting chocolate. Mix that well and once fully melted pour it onto the peanut butter filling. Then spread it over the top all the way to the edges. Next place the whole baking dish into the fridge to let the chocolate harden.
When your chocolate is hard, cut your bars into squares and serve them. You will be amazed at how addictive and delicious these Peanut Butter Squares are.
