Low Carb Pumpkin Casserole
I don’t like pumpkin y’all. But I LOVE this pumpkin casserole! I’m not sure what it is about the combination of these ingredients, but it makes for a super yummy fall side.
I have been on the search for some low carb dishes for quite sometime. The issue I’ve found with many of the low carb meals is they’re often times low taste meals too! This low carb pumpkin casserole does NOT fall into that category. My hubby thought he was eating sweet potato casserole. I just grinned as he told my eldest what it was (“sweet potato casserole” – little did he know) … I did spill the beans … eventually. 😉
I’m a simple cook. I despise trying to follow a recipe when I don’t know what I’m cooking with! This casserole is yummy, simple, and quick! Sounds like a winner to me!
Ingredients:
Pumpkin Mixture:
- 1 large can of pumpkin puree (I used Libby’s)
- 1/4 cup of heavy cream
- 1 jumbo egg
- 1/4 cup Truvia (I used 2 tbsps. of Sweet Blend from Trim Healthy Mama)
- 1 tsp cinnamon
- 1 tsp vanilla
- Pinch of salt
Topping:
- 2 cups chopped walnuts
- 1/4 cup of Truvia (again I used Sweet Blend)
- Dash of cinnamon
- 1/2 cup of butter
- Pinch of salt
- 1/8 tsp maple flavoring
Combine all pumpkin mixture ingredients
Pour mixture into 2 quart baking dish. Mix up the topping ingredients and pour on top of pumpkin.
Bake for 30 minutes and enjoy!
This side dish is perfect for a Thanksgiving or Christmas dinner, but I really think it’s going to be a little more often around here! This low carb pumpkin casserole has made this mama love some pumpkin!

Serves: 8 servings
- Pumpkin Mixture:
- 1 large can of pumpkin puree
- ¼ cup of heavy cream
- 1 egg
- ¼ cup of Truvia
- 1 tsp cinnamon
- 1 tsp vanilla
- Pinch of salt
- Topping:
- 2 cups chopped walnuts
- ¼ cup Truvia
- Sprinkle of cinnamon
- ½ cup of butter
- Pinch of salt
- ⅛ tsp maple flavoring (optional)
- Preheat oven to 375 degrees
- In a bowl mix pumpkin mixture ingredients
- Butter dish well
- Place pumpkin mixture in 2 quart baking dish
- Mix topping ingredients
- Pour over pumpkin mixture
- Bake 30 minutes
