Fall is here and it is time to start planning your Thanksgiving menu! The highlight of my Thanksgiving is always the desserts! Who doesn’t look forward to that? All of your guilty pleasures in one place, at one time, in one afternoon/evening! It’s bliss!
What is your favorite Thanksgiving Dessert?
I love pumpkin pie, but no-Bake cheesecake is my favorite guilty pleasure. It is simple, sweet, and EASY! So very, very easy! Once I mastered the basic recipe, I started playing around with various flavor combinations throughout the year. The one I look forward to making most is my white chocolate pumpkin cheesecake. This cheesecake has everything you could want from pumpkin pie, mixed with the creamy sweetness of cheesecake. It’s perfect, and a great addition to your Thanksgiving dessert table.
White Chocolate Pumpkin Cheesecake Recipe
Ingredients:
- 2 cups Graham Cracker Crumbs
- 1/2 cup butter (melted)
- 2 tbsp sugar
- 1 cup Pure Pumpkin
- 2 Packs Cream Cheese
- 1 can Sweetened Condensed Milk
- 1 pack White Chocolate Pudding
- 1 tbsp Pumpkin Pie Spice
- 2 cups Whipped Cream
- 1 cup White Chocolate Chips
Directions:
Set out cream cheese.
Prepare cheesecake crust by combining graham cracker crumbs, butter, and sugar in a small bowl. Mix with a fork until the butter is incorporated well. Press mixture into pie dish firmly. Refrigerate until ready to use.
Combine cream cheese, sweetened condensed milk, pure pumpkin, pudding mix (unprepared), and pumpkin pie spice in a large mixing bowl. Mix well until smooth and creamy. Fold in whipped cream. Pour mixture atop graham cracker crust and chill overnight.
Before serving, smooth the top of your pie and drizzle with melted white chocolate.
NOTE:
Don’t skip the white chocolate! I add white chocolate to the mixture with a delicious white chocolate pudding packet, but there is also a big purpose for it. The pudding is what helps the cheesecake to be a little firmer after the super-moist pure pumpkin is added. Without it, this pie will not set!
Variation Idea: If you want to skip the white chocolate drizzle, add a layer of whipped cream instead!
