When it comes to side dishes, it’s really hard to get away from the basic veggies. However, for a yummy change of pace, I have an easy Broccoli Casserole recipe that I am sure you will love! I even have family members that refuse to eat broccoli that love this simple recipe! So, shoosh! Don’t tell! But, whipping up this tasty casserole is a great way to get the kids, and other family members, eating their green veggies!
Easy Broccoli Casserole Recipe
Ingredients:
14 oz bag chopped broccoli
1/2 cup chopped onion
1 can mushroom soup
1/2 cup milk
1/4 cup grated cheddar cheese
6 saltine crackers
2 Tbls. butter
Instructions:
1. Preheat oven to 350 degrees.
2. Boil broccoli and onions in a medium sized sauce pan until tender – approximately 5-7 minutes once boiling.
3. While broccoli and onions are boiling, mix mushroom soup, milk and grated cheese in a small to medium size bowl.
4. Once broccoli and onions are tender, drain and place in sprayed casserole dish (8×8, 9×9, or 2 quart).
5. Pour the soup mixture over the top of the broccoli and onions.
6. Roll (crush) crackers and sprinkle on top of the soup mixture. I use a baggie, which makes easy work of crunching the crackers.
7. Top with drops of the butter – no need to melt, just drop randomly on the top of the crackers.
8. Bake at 350 degrees for 25-30 minutes or until brown and bubbly.
