I think Mother’s Day isn’t just a day for children to celebrate with their mom, but for friends to share with other moms too. This coffee cake recipe aims to serve two purposes. The first, is a gift to other mothers you know. The second, is breakfast for your family while they prepare your grand Mother’s Day breakfast tray.
Gifting our friends:
Many mothers attend church on Sunday morning following our early morning with our own families. There you will find mothers who didn’t receive the grand treatment for whatever reason. You can do something with your family for these mothers by preparing mini coffee cakes together on the Saturday before Mother’s Day. Once your cakes have cooled, wrap them in flour sack towels and use twine to keep closed.
To our family:
The night before Mother’s Day, leave a note for your family along with a coffee cake (or two), letting them know that you prepared something for them to say thank you for all that they do too.
Mother’s Day Mini Coffee Cake Recipe
Ingredients:
- 1 1/4 Flour
- 1/2 Cup Sugar
- 1/4 tsp baking soda
- 6 tbsp butter softened
- 2 eggs
- 1 tsp vanilla
- 1/3 cup buttermilk or sour cream
Topping Ingredients:
- 1/3 Cup Granulated Sugar
- 1/3 Cup Brown Sugar
- 1/2 tsp. Ground Cinnamon
- 1 1/2 cup flour (sifted)
- 8 tbsp. butter, melted
Directions:
Preheat oven 350. Grease three 4 inch, by 2 inch round baking pans. Set aside.
Using your stand mixer with paddle, combine flour, sugar, and baking soda. With the mixer on low, add butter 1 tbsp at a time. Continue mixing until the butter is incorporated into the flour (should be crumbly). Add eggs, vanilla, and buttermilk/sour cream all at once. Mix for two minutes or until smooth.
Pour batter into prepared baking pans. (Pans should be less than half full with batter.) – set aside.
Prepare topping by combining sugar, brown sugar, cinnamon, and flour in a small bowl. Cut in butter until mixture resembles course crumbs.
Divide topping between all three pans.
Bake for 30 minutes. Rotate pans. Bake for an additional 15 minutes (or until toothpick/fork comes out clean)
Allow cakes to completely cool before removing from pans. (Tip: Don’t turn them upside down to remove or you will lose topping)
